Waters around Icleand are crystal clear and very cold, fish have ideal conditions, fish is healthy and very tasty with great nutrition values and low fat level.

Atlantic cod

Cod is the most typical fish in Iceland. This rather fast growing, active and greedy fish can be 180 cm long. Common size in catches is in between 45 - 85 cm long. This corresponds to 4-7 year old and 1-4 kg fish. It is widely used in gastronomy due to its fine meat. It is suitable for preparation in sous-vide, oven or pan.

Sizes : filet (4-800gr, 800gr+, 1500gr+), back filet (150gr+), loin (200gr+, 400gr+, 800gr+)

Golden redfish

(Sebastes marinus – Karfi)

Redfish is a very popular fish in Iceland, mainly for its very firm meat. It is commonly from 35 - 40 cm long in catches, exceptionally up to 100 cm. It is suitable for all types of cooking methods, great to put on grill.

Sizes : whole fish (500gr+), filet (300gr+), loin (100gr+, 300gr+)

Arctic charr

(Salvelinus alpinus – Bleikja)

It is one of the northernmost fish species, hence the name arctic. It is reared in crystal clear waters around Iceland, using sustainable green energy. No antibiotics or other medical products are used and it has not been genetically modified (GMO) in any way. Wild catch is being restricted by the Icelandic government. Charr belongs to salmon fish family but its meat is leaner and with finer structure. It became very popular in gastronomy.

Sizes : filet skin on (2-400gr)

Catfish

Catfish is predatory fish that mosty occurs on sea bottom off West Fjords in the west of Iceland. It is large sized, rather long fish, usually around 50 - 60 cm long. The largest individually caught individual measured 125 cm. It feeds mainly with crustaceans, hence its Icelandic name. It has great nutrition values and is best when prepared in oven.

Sizes : filet (2-800gr), loin (2-400gr)

Availability : all year, except summer


Plaice

(Pleuronectes platessa – Skarkoli)

Plaice is a medium sized flatfish. It has a smooth skin and can be easily recognised by the red and orange spots on the otherwise dark back, the underside is white. The usual size in catches is 30 - 50 cm, the maximum recorded size in Icelandic waters is 85 cm. Plaice is common all around Iceland. It is being hand trimmed and can be prepared in pan or oven, delicious are filled rolls baked in oven.

Lemon sole

Lemon sole is a rather smaller sized flatfish, usually around 30 cm long, but the largest individual caught in Icelandic waters measured 63 cm. It feeds mostly with atlantic shrimps, hence its finely pink meat with hight level of iodine and very specific taste. It is being hand trimmed and can be prepared in pan or oven, delicious are filled rolls baked in oven.

Ling

Ling belongs to cod fish family with a very large size. It is often found in great depth. The largest on records was 212 cm long. It has a very fine meat and tastes great with all kinds of sauces.

Tusk

ICELAND

Tusk is a very popular cod family fish, usually 40 - 90 cm long. The largest individual caught in Icelandic waters measured 120 cm. Its fine white meat can be combined with various kinds of sauces.

We newly import salmon from eco farm in Denmark


Arctic Salmon - premium quality

This salmon is newly brought to the Czech market. It is reared in quite newly built eco farm in Denmark, using very clear water with modern recycling technology and pumps. Fish is regularly swimming due to created stream and is fed with naturally based food. Its farming is very environmentally considered. Fish is healthy due to its regular swimming, 100% without genetically modified hormones (GMOs) used, without antibiotics and with no sea lice. It is premium quality. It can be prepared using various cooking methods as well as smoked, gravlaxed or used as sashimi meal. It has a specific finely sweet taste and very lean meat

Sizes : whole fish (¾ and ⅘), filet (1,1-1,4 TD, TE, 1,4-1,8 TD, TE)
