We are first who used air cargo to fly fish from Iceland. Why fish from Iceland? Fishery is well controlled by the government, there are annual quotas to keep sustainability. Fishery is also very environmentally responsible.
Fish is purchased on electronic auction right after the catch (traceability is secured by catch certificates). We choose fish caught with lines with hooks as fish is caught individually. It is the most considered fishery method towards fish and sea bottom.
